Paleo Friendly Blueberry Pumpkin Muffins
You might be wondering about now what is up with me and pancakes/muffins on my website! Ok, I admit it, I like to bake and I am always looking for something quick to have in the morning with my coffee. It keeps me from getting the jitters and keeps my cortisol levels from spiking too high during my morning coffee (excessive cortisol leads to belly fat!). I have created this recipe from other great paleo muffin recipes, adding blueberries (because they are in season) and Vanilla Trim Shake, for extra protein and a smidge of sweetness. The objective here is not to create a super sweet muffin, but something with a healthy punch of protein and fats that will satisfy to go along with your spinach and eggs! Gourmet!
