It has always been a challenge for me to get enough fiber while eating a primarily Paleo diet. I was used to eating high fiber cereals or tons of beans and lentils to... a-hummm, you know. I love that by following a Paleo diet I have increased the portions of veggies that I consume by about 10 times! When people ask me what I eat, I tell them that I eat mostly vegetables, some fruit, fats and some meat. I don't eat as much meat as some Paleo experts might recommend...I just can't eat it! Too much makes me gag! Is that wrong?
Ok, I digress. Back to fiber on the paleo diet. I have found a fiber-rich pancake for the mornings that when paired with a few raspberries, will get up to 10+ grams of fiber for my morning meal. This is pretty good, since it is recommended that women eat 35 grams and men eat at least 25 grams of fiber per day. Of course, these pancakes are grain free (almond meal of course!), sugar free (unless you have a touch of maple syrup, silly) have plenty of healthy fats, protein and a half serving of vegetables if you add the pumpkin. This couldn't be more simple, only three ingredients, a few more if you want to make it a pumpkin spice pancake.
1 C. Almond Meal or Flour 1/3 C. full fat coconut milk 2 eggs 1/2 C. organic pumpkin 1 tsp pumpkin pie spice to taste more cinnamon if you love it like I do!
Combine all ingredients
Heat griddle and spray with coconut oil spray Smaller pancakes work best, 1/3 C scooper
Brown lightlyon each side, can take a bit longer than you might think!
Ghee or grass-fed butter is nice, as well as 1/2 C. raspberries and a touch of maple syrup. Chopped walnuts could be added to this as well.
