Every person that I know who tries to stay on a "Clean Eating" diet, or follow the Paleo Diet, know how hard it is to eat enough starchy carbohydrates to stay full and satisfied. Eating clean, or Paleo, is not just about eating tons of meat. I believe that it is more of a Organic, Vegetarian-based diet that includes grass-fed, sustainably raised beef, free-range eggs, free range chicken, wild caught fish and lamb. My "go to" staple to give me energy, stamina, and keep me from diving head-first into the crackers is Sweet Potatoes. I eat them every which way to Sunday and have finally got my kids to enjoy them (somewhat) in place of white potatoes.
Enjoy this easy to prepare, kid-friendly sweet potato recipe that is great paired with your favorite lean protein and salad. Be sure to make extra so that you can use the left-overs for breakfast "Sweet Potato Hash".
2 Large Sweet Potatoes, scrubbed, skin left on
1-2 Tbps. Olive Oil
2-3 Tbsp. Chopped Parsley
1-2 Crushed Garlic Cloves
Salt and Pepper to Taste
Slice Sweet Potatoes
Cube Sweet Potatoes
Toss all ingredients together and place on a Parchment Paper Covered Pan
Bake for 25 Minutes on 350 degress, moving around halfway through.
