Cauliflower is another vegetable from the Brassica family of vegetables, that also include brussels sprouts, cabbage and kale. I eat at least one serving from these everyday, and according to Dr. Christiane Northrup, they "contain glucosinolates which contain sulfer compounds that help protect the liver and improve it's ability to eliminate toxins and excess hormones." In a nutshell, if they are helping with digestion and detoxification, I'm eating them!
This is also a great low-impact carbohydrate to add to your "Anytime Meal".
1/4 c. broth or milk (I use low-sodium chicken broth)
2 oz. goat cheese
1/4 tsp garlic powder
salt to taste
pinch of pepper
1. Chop cauliflower into small pieces (about 1″) until you have 5 cups worth.
2. Place florets into a medium-size pot and fill it with water- enough that it covers the cauliflower completely.
3. Cover with a lid and bring to a boil. Once the water starts to boil, reduce to medium-high heat and cook until the cauliflower is very tender- about 15 minutes.
4. Drain water and place cauliflower back on a burner over low heat. Add the goat cheese and broth and stir well. Add the remaining ingredients and stir again.
5. Using an immersion blender, blend all of the ingredients together until you reach a smooth consistency. If you don’t have an immersion blender, a food processor will do the trick just fine.
