I am always looking for something quick to have in the morning with my coffee. It keeps me from getting the jitters and keeps my cortisol levels from spiking too high during my morning coffee (excessive cortisol leads to belly fat!). You can always adjust how much cocoa you want, whether to add chocolate chips or not and how much honey to add for sweetness. The objective here is not a traditional sweet breakfast, but something that will satisfy to go along with your spinach and eggs! Gourmet!
I found these awesome flourless muffins at RunningWithSpoons.com. I made a slight adjustment by to the baking soda. Flourless muffins tend to be gooey, and they need a bit more baking soda to help them rise. I also reduced the amount of honey that I add from 1/4 cup by half. I double this when I make it, so I ended up using 1/4 C. honey for a double batch. They were plenty sweet for my taste, but that is up to you! I always experiment with adding whey protein to my baked goods, but have not done that yet to this recipe.

½ cup almond butter* 1 ripe medium/large banana 1 large egg ¼ cup honey ¼ cup unsweetened cocoa powder 2 Tbsp. ground flaxseed 1 tsp. vanilla extract 1 tsp. baking soda 1 cup zucchini, shredded and squeezed of excess liquid ¼ cup chocolate chips, plus more for sprinkling on top
1. Preheat oven to 375 F and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside. 2. Add all ingredients except for zucchini and chocolate chips to a blender and blend on high until batter is smooth and creamy.
3. Stir in shredded zucchini and chocolate chips by hand. 4. Pour batter into prepared muffin pan, filling each cavity until it is about ¾ full. Sprinkle with additional chocolate chips, if desired. 5. Bake for 20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing.
6. Store in an air-tight container for up to a week, or make a double batch to freeze!
